For over 80 years, Rosarita Refried Beans have been a staple in homes around the globe. These refried beans or frijoles are dry beans that have been cooked, mashed, then fried with garlic powder, chili pepper, and spices as well as onions, salt and pepper. Rosarita Brand Refried Beans are manufactured by Conagra and come in a 16 oz. can. They are available for purchase at most grocery stores as well as online in bulk. They are gluten free and may be used in any number of recipes that call for this ingredient. Here is a great family dinner they will ask for time and time again:
1 teaspoon olive oil
1 onion, chopped
1 (15 ounce) can Rositeria refried beans (or one cup of homemade)
10 (6 inch) corn tortillas
1 tablespoon taco seasoning
1 cup enchilada sauce
1 medium roma tomato, chopped
1 cup vegan cheese, shredded
1 (2 1/4 ounce) can black olives, sliced
2 green onions, sliced
Prep Time: 15 minutes
Total Time: 17 minutes
1. Sautee onion in oil. Add beans and taco seasoning. Heat through.
2.Spread mixture evenly on 5 tortillas. Top each one with another tortilla.
3.Spread with enchilada sauce. Sprinkle tomatoes, then cheese, then olives, then green onions on top, dividing evenly between all five “pizzas.”
4.Broil in oven for 1-2 minutes or until cheese is melted.
5.Cut each small pizza into four sections with pizza cutter. (serves 5)
