Low Fat Muffin Recipes Made with Applesauce

This is a fun way to create healthy low fat applesauce muffins with your left over fruit sauce or any substitute fruit spread. These can be made with a strawberry sauce, pear sauce or peaches!

Apples have been found to lower cholesterol, protect against osteoporosis, ease the discomforts of asthma in children, help  manage insulin levels in diabetes, and can be helpful in the protection against certain types of cancer. Eating apples is truly a great way to “keep the doctor away” as the old proverb states.

Cinnamon Applesauce Oat Muffins

2 cups ground oat flour

½ cup rice flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon sea salt

Mix together:

2 eggs

½ cup maple sugar

½ cup applesauce

3/4 cup soymilk

¼ cup canola oil

Mix all dry ingredients together and then fold the wet mixture in.

Be careful not to over mix.

Fill muffin liners to the top.

Bake at 375 degrees for 15 minutes.

Vegan Applesauce Bread or Muffins

 ½ cup applesauce

1 tablespoon lemon juice

½ cup honey

¼ cup canola oil

1 ½ cups whole wheat flour

½ teaspoon salt

½ teaspoon baking soda

1 teaspoon vanilla

1 teaspoon cinnamon

Pinch nutmeg

In a mixer, add applesauce, lemon, honey, oil and vanilla. Mix well.

Add dry ingredients and pour into oiled bread pan.

Bake at 375 degrees for 4o minutes until a knife placed through the center comes out clean.

For muffins, fill muffin liners to the top and bake at 375 degrees for 15 minutes.
